Crepes


This past weekend I had some girlfriends over for brunch before a day of shopping. I made my go to breakfast casserole which is always a hit, but wanted to try something else as well. I decided to try my hand at crepes. Growing up in Germany I fell in love with crepes fill with Nutella and they always looked pretty simple to make. Thankfully I found a simple recipe at allrecipes.com.

Ingredients:
  • 1 cup all-purpose flour
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup water
  • 1/4 tsp salt
  • 2 tbsp melted butter
Directions:

  1. In a large mixing bowl, whisk together the flour and the eggs. Gradually add in the milk and water, stirring to combine. Add the salt and butter; beat until smooth.
  2. Heat a lightly oiled  pan over medium heat. Using a ladle, scoop the batter into the pan. Tilt the pan with a circular motion so that the batter coats the surface evenly.
  3. Cook the crepe for about 2 minutes or until the bottom is light brown. Loosen with a spatula, turn and cook the other side. Spread Nutella on one half and then fold over. Cook and flip, the fold in half again. Serve hot. 

I also put a bowl of confectioners sugar, whipped cream, and strawberries on the table to add to the crepes. Thankfully my first attempt was a major success and the girls (and I) loved them. I think this will be my new sweet go to for brunch with friends or desert.
